I am really struggling with how to post-process this image in order to make it totally “pop” using LR and/or PS.
Any help / comments would be truly appreciated.

I think your image does pop. If that’s your intention I think you’ve achieved that.
I think this image would work by cropping the blue sky (maybe a 16:9 ratio) and focusing on the atmospherics and the subtle layers in the atmospherics. It wouldn’t be an image that pops but there would be plenty of drama to work with.
From a technical perspective there appears to be a processing attract on the top of the first peak on the left where there is a sudden colour transition from blue to yellow. It might be from Lightroom’s dust spot removal tool.
