Can someone give me a quick rundown on focus stacking or a place to acquire some knowledge about it please.

Welcome to the community Mike.

I do a ton of focus stacking for large gigapixel landscape images. Somewhat of a different application of focus stacking. I have written several blogs and done a couple videos about the topic.
